We offer a breakfast buffet filled with Kumamoto specialties. “Local flavors” and “Handmade”
Enjoy local cuisine deeply rooted in the region since ancient times, including horsemeat dishes, one of Kumamoto’s major specialties; mustard lotus root, a tradition dating back to the Edo period; as well as chikuwa salad, Kumamoto ramen, Noppe soup, and other dishes commonly eaten by the residents of Kumamoto Prefecture.
We offer a buffet featuring roughly 50 different dishes blending both Japanese and Western cuisine styles and made using generous amounts of locally grown ingredients, including organic vegetables only possible thanks to the mineral-rich natural water and rich soil of Kumamoto; such as Kumasan no Chikara, a Kumamoto brand of rice grown using the groundwater flowing from Mt. Aso; as well as leaf mustard, Kumamoto red eggplants, and Kumamoto tea leaves; along with tsukudani (ingredients boiled in soy sauce) made using fresh laver grown in the Ariake Sea; Aso Oguni Jersey Milk, the pride of the Aso region; and bread pudding made using Kumamoto dekopon citrus fruit.
